Tokyo-born mixologist Gento Torigata travelled across the globe working in bars from Ginza to Sydney and Singapore before landing in the UK. Most recently he was bar manager at the fabulous Kwãnt in Mayfair for the past two years. Now he's branching out on his own, opening up Waltz on Scrutton Street.

A second Pizza Pilgrims is on the way to Shoreditch, this time opening on Brick Lane opening as part of the Truman Brewery.
