Old Street bar FlipDog is using a red hot poker to make its drinks. We're not kidding.

Look, we love a gimmick as much as the next person, but even we were slightly taken aback by the upcoming Old Street bar FlipDog. The bar (and yes, it is a cocktail bar rather than a hot dog place) is going to be using a Loggerhead method to make some of its drinks. That means they're going to be putting a 1200°C iron poker into the drink "to enhance flavour, texture, and aroma."

It all sounds completely wild, but the owners behind FlipDog do have prior. Co-owner Artem Skapenko co-owns HRAM and Loggerhead Kyiv, described as a hidden gem by the World's 50 Best. That also uses the iron poker technique in its drinks. Artem is joined by co-founder and bar owner Artem Skapenko, while the man in charge of the bar here will be Igor Brovko, a Ukrainian bartender who spent over two years at Tayer + Elementary.

In addition to their cocktail-making techniques, the space at FlipDog also looks unusual, running across two floors. It sounds a little like Tayer + Elementary too, in that there are two distinct rooms - a 20-seat space at ground level where the drinks change all the time, and an 80-seat room underground with a different drinks list.

There will be food too; they're promising a menu of seasonal shareable small plates and larger dishes, with a mix of European and Asian influences.
