Every time we think London's obsession with burgers is about to take a downturn, along comes another slew of new openings to prove us wrong. And right now the city is in the grips of the chef-led burger. We've had Jackson Boxer turn things up with his limited edition offerings at Vesper and chef Jordan Bailey (who formerly had two Michelin stars at Aimsir) is going big with his Heard restaurants, which are just about to open their third space.

Having started in Borough Market only last year, formerly Michelin-starred chef Jordan Bailey is building quite the burger empire as he's getting ready to open his third Heard.

This latest burger bar will be in Covent Garden (it's taking the place of an old Byron), and on the ground floor it will be business as usual. That means it's all about smash burgers served in potato buns, with burgers like the signature Heard - a double smash patty with jalapeño hot honey, Ogleshield cheese, white onion and their secret sauce.

But this time he's also adding something new.

Shoreditch has been home to quite a few mad pop-ups, but we're rather liking the idea of this latest one which sees McDonald's opening a butcher's. 

Taking over a corner site on Shoreditch High Street, the pop-up is designed like a traditional butcher's, with the British and Irish beef that goes into a McDonald's burger all laid out. Apparently, the idea behind it is to showcase that the burgers at McDonald's really are just made of beef with a little added salt and pepper and nothing else. Firmly in its 20th anniversary celebrations this year, Hawksmoor is getting ready to unveil a big new burger collab across all their restaurants in August. 

They've teamed up with Callum Airey, best known as Calfreezy, to launch the limited-edition Burgurr. Trends come and go, but Londoners will never be tired of a truly great burger. So, here are the burgers that you really need to be seeking out right now. 

A year ago, French burger joint Dumbo arrived in London (from France), opening in a small space in Shoreditch. It quickly became one of the new must-have burgers to try, sitting alongside other crazes like Supernova. 

Now they're about to open a new Dumbo and this one will be both a lot more central and a little bigger too. They've taken over a site on Berwick Street that's already been known for its burgers, as it used to be the Soho branch of Tommi's Burger Joint.

Pizzas might be having their time in the sun right now, but London has plenty of room for more smash burgers, it seems. Junk Burger are already gearing up for their third launch in London, this time inside Spitalfields Market. 

The smash burger restaurant originated in Paris (not to be confused with that other Parisian smash burger joint, Dumbo) before opening in Soho first and then Marylebone, just off Oxford Street. This third restaurant hasn't been officially announced at the time of writing, but a big hoarding outside the restaurant in Spitalfields rather gives the game away.

Up until now, the very, VERY good Jupiter Burger (from Greg Boyce, one of the people behind Dom's Subs) has only been available in Netil Market in London Fields. That's great in summer but less so in this so-called "spring" we're having. However, for two weeks they'll be actually going inside, taking over Pasero in Tottenham.
