Maki Nori sees the Soho Maki & Ramen open an upstairs Japanese handroll bar

We've already written about the new Maki & Ramen that has recently opened in Soho, but it turns out that they have another trick up their sleeve. The space that they took over was pretty large (it used to be La Bodega Negra), so they've decided to open something new in the upstairs section called Maki Nori. 

Maki Nori is a Japanese handroll bar, something that's a bit of an emerging trend in London (we'll soon get another bar, Temaki in Mayfair). This will be a little larger than many of the handroll bars, seating around 60 inside with 20 of those on the counter. Their main proposition is speed - they aim to create the 15-second roll, getting it into your hands as quickly as possible (although we're assuming that will only be possible at the counter). 

Sourcing is also an important aspect and the team say they'll be getting in scallops and sea urchin from Japan, bluefin tuna from Spain and salmon from Scotland. Apparently they'll be dry-ageing fish on site too, as well as growing their own herbs. Exactly what the handrolls are going to be is under wraps at the moment (sorry, couldn't resist) but as soon as we get details of those, we'll update this piece.
