Florence Knight's rooftop restaurant Lunette is the next big thing at Nick Jones' St Clement hotel

It's been just over two years since chef Florence Knight left Sessions Arts Club, the beautiful-looking restaurant that she helped launch in Clerkenwell. And now the chef is getting ready to make her return to the London dining scene. 

She'll be taking over the rooftop restaurant on the 11th floor of Nick Jones' St Clement hotel just off The Strand, called Lunette. If you thought the opening of Cafe Clement was a big deal, this is several leagues beyond that. 

Food-wise, they haven't told us much yet, other than it will be a set menu affair (four courses at lunch, eight in the evening). A piece in the FT, who managed to actually try a preview lunch, gives a little more away, though. The dishes served up there included a “pomme soufflé” puff filled with smoked eel and topped with a nasturtium flower, milk custard with Cévennes onion sauce, topped with caviar and baked petals and pork loin with fresh fig and anchovy Cinsaut sauce, mustard fig and creamed coco bianco beans. If you'd tried Florence Knight's food at Sessions, you'll definitely detect her style in those examples. 

As for the design of the restaurant, we're told to expect "handblown glassware, feather-shaped steak knives and stitched leather chairs" all within the Brutalist framework of the building. When Sessions opened, it was one of the most beautiful new restaurants in years, so we have high hopes for the look of Lunette.

And from the photos we've seen, like the rest of the hotel and Cafe Clement in particular, Lunette seems to have been all finished off well in advance of the actual launch. There's no last-minute painting a day before opening at this endeavour. We wouldn't be surprised to see lots of pictures and videos on Instagram, particularly if they're already running test meals. So keep an eye out for more in the coming weeks...
