Whatever chef Sertaç Dirik was going to do as a follow-up to his tenure at his family's restaurant Mangal II was always going to be the kind of place to get us excited. And now we know exactly what he's planning. He's opening KID and, crucially, he's chosen a seriously impressive partner to get into bed with, David Carter. Carter, you'll probably know best as the man behind such massive hits as Borough's Oma and Agora, along with Smokestak.
This will be Sertaç's first solo venture, and it's going to see him explore the Turkish food he grew up with, with a strong focus on amazing British produce and what's in season. He'll also bring his experience from having worked in Copenhagen for ages to the table here.
Early word on the menu sounds great. Carboholics will be taken care of with the restaurant's Tombok and sourdough pide. The kitchen will make their own çökelek cheese in-house. Taking one dish to show you just how interesting a take this will be, the içli köfte will be made with a slow braise of aged ex-dairy beef, roasted onions and grape molasses, wrapped inside a bulgur shell. And, as you might expect given the restaurant's name there will be kid too, cooked overnight in the wood oven. Sorry, that's just us drooling on the keyboard.
As for the space itself, they've taken over an old cafe site in the heart of Soho, next door to Humble Chicken. There will be table seating and counter dining and they're also planning a wine room that can also be used as a private dining room.
If you want to know just how excited to be about this, then look to recent opening Impala as something of the same level. This is going to be a massive deal.
