The arrival of new Head Chef Charlie Dilworth (formerly of Lita) has prompted a major overhaul of the menu of the Mediterranean restaurant in Mayfair. He's introduced a much stronger focus on seasonal British produce while retaining a handful of Silva favourites, including its crispy fried eggs with girolles.
The newly refreshed menu leans heavily into seafood, with standout dishes including yellowtail crudo with kiwi and jalapeño, Orkney scallops with 'nduja butter, native lobster with vadouvan-spiced carrot purée and halibut with scallop toast and chicken butter sauce. Desserts, from new pastry Chef Phoebe Elsam (ex-One Club Row, The Georgian at Harrods), range from Silva's long-standing Basque cheesecake to new creations like Sicilian mango with ricotta cannoli.
