Whole Beast find a permanent Brixton home for their nose-to-tail live-fire cooking

Whole Beast find a permanent Brixton home for their nose-to-tail live-fire cooking

They've been popping up across town and now nose-to-tail, live-fire cooking experts Whole Beast are about to open their own permanent place in Brixton.

Taking over the space that was Shrub and Shutter, founders Sam and Alicja Bryant are promising a restaurant that really makes the most of their nose-to-tail approach or, as they say, "doing cool sh*t with the parts of the animal most aren’t as fussed with."

Of course, there will be burgers. Their aged cheeseburger (aged beef patty, bread and butter pickles, smoked bone marrow, burger sauce, diced white onions, American cheese and a milk bun) was awarded the Champion of Champions award at the National Burger Awards, so you know that will be a bit special.

Also on the menu, you'll find dishes like their whipped smoked cod’s roe and hash browns, green chorizo tacos, fatboy potatoes and apple & cheddar pie. And as for drinks, there will be natural wines, craft beers and cocktails. Sundays will be pretty great too, with whole joints roasted over coals and served with aged beef dripping trenchers.

It's definitely one to watch, with Sesta's Drew Snaith picking their former Walthamstow residency as one of the best in the area. As for their ultimate plans? They say "We’re not just opening a restaurant, we’re building a fire-lit temple to everything we stand for."
