With Mor, Tom Sellers takes on the highly impressive restaurant space at Carbis Bay in Cornwall

Just outside St Ives in Cornwall, as part of the Carbis Bay resort, there's an absolutely spectacular restaurant space with a completely uninterrupted view into the sea. Until last year, that was the previous home for Adam Handling's Ugly Butterfly, which we took a Test Drive of ourselves. And soon, it's going to be the Cornwall home of Restaurant Story's Tom Sellers, called MOR.

Sellers had already popped up there in pre-Covid times, so it's a space he's familiar with. Given the location, it's perhaps unsurprising that the menu here will be driven by local Cornish produce. We're some way from seeing a full menu, but dishes planned for the restaurant include Cornish crab with steamed milk buns, house condiments & garden lettuces alongside nori-wrapped, day boat mackerel escabeche with English wasabi & young ginger. He's also promising a clotted cream soft-serve for dessert. 

In charge of refreshing the space is Shayne Brady (most recently responsible for Jeremy King's Simpson's) who is being inspired by a mix of "Japanese Shintoism and Cornish Celtic mysticism". He's got a great canvas to work from, that's for sure. 

So, if you're planning a trip to Cornwall this summer, it'll be worth watching for an opening date for this.
