The people behind hit restaurants that include Gymkhana, Hoppers and Trishna (as well as Lyle's, Kitchen Table and BAO) are growing again with a new restaurant, Bibi. This will be from chef Chet Sharma, who was most recently their Group Development Chef but has history at Moor Hall and L'Enclume too.
The food here will have influences that range "from roadside cafés from Punjab in the north, to Kerala in the south." That translates into a menu that includes:
- Raw Beef Pepper Fry, with dry-aged Dexter top round with a coconut ash dosa and ginger pickle
- Gondhoraj Scallop with scallop roe chaat masala and jalapeño
- A Sigree section of skewers which includes Green Chukh Masala Thigh, 4-pepper Lobster and a Dagad Phool Lamb Rump
There are also snacks like Lobster Claw Vada and Chicken Liver Maska Bun and desserts include Apricot, Buttermilk and Black Sesame Halwa.
The cocktails show similar influences in drinks like Ice Gola (tequila, calamansi, apple marigold and chaat masala). Meanwhile, the look of the restaurant aims to reflect Rajasthani architecture (and they'll have a 20-seater terrace too).
