They started out selling oysters out of a pretty cramped space in Borough Market. But 20 years down the line, oyster merchants turned restaurateurs Wright Bros are now getting ready to open a glamorous new restaurant in the heart of Covent Garden. This winter they're taking over the old Margot site, which, if you recall, is a pretty large two-storey space.
It's a prestigious address, and to match it, they've put together quite the team. In charge of the menus is Executive Chef Kevin Gratton, who worked with Mark Hix for years. He's joined by Head Chef Jaspal Flora (ex-45 Jermyn Street).
If you fancy just popping in for some oysters and a glass of Champagne, you can head straight for the scallop-tiled counter bar at the back of the room. Otherwise, you can take a table in the main dining room for dishes like butter-grilled oysters with black winter truffle or ink-braised cuttlefish with sea aster. There'll also be all fruits de mer platters, and we're going to have to try the brand new dish they're showcasing here of oyster gelato with olive oil and caviar.
"It's another step forward in a two-decade journey that began with a deep passion for oysters and seafood," say owners Ben Wright and Robin Hancock, of the new opening. It's been a while since we've had a new restaurant from Wright Brothers, but we think this will be the perfect space for them.
