Londoners love a good focaccia sandwich. All you have to do is look at the queues going round the block every time a new branch of Dal Fiorentino opens. So we're relatively confident that the arrival this monnth of Fulvio's in the heart of Soho is going to do great numbers.
The folk behind it are the team at Fatto a Mano, a Neapolitan pizzeria that originated in Brighton but now has six pizzerias across town. Apparently, Brighton team member Fulvio made such outstandingly good focaccia, which was used for the team's lunches, that the bread inspired the idea of a sandwich shop to hero it.
"People think the secret is in the filling," explains fulvio. "But the secret is in the dough. Twenty-four hours. Then the focaccia is eaten the day it’s made. Nothing clever.”
This will very much be a traditional Italian sandwich shop, with every order being made in front of you. Options on the launch menu will include: Mortadella with 24-month aged Parmesan, artichoke cream, wild rocket and shaved Parmesan; 24-month aged Prosciutto di Parma with mozzarella, sun-blushed pomodorino tomatoes, wild rocket and extra virgin olive oil; and grilled peppers with marinated courgettes, rocket and Sicilian pesto
If you're in Soho needing to grab a coffee and pastry in the morning, it'll be open for that. But woe betide anyone wanting to order a cappuccino in the afternoon. Apparently they're going to ring a bell of shame anyone tries to order one after 12pm.
