It's been a while in the making, but the big revamp of Olympia is closer to getting its grand reveal. First to open is the new Pillar Hall, from ex-D&D's Des Gunewardena and his D3 Collective and there's quite a lot to it.
First up is Idalia, the restaurant, and it's pretty massive, seating 300 people. It's going to be a grand all-day dining room with a "garden-inspired" design that's based on a classic country house style. The kitchen here is led by Executive Chef Samantha Williams (who previously worked with Angela Hartnett) and it's being pitched as a modern British affair. Dishes here include a Herdwick lamb cutlet with courgette flower, sheep’s curd and romesco and a whole wood-roasted turbot with shichimi togarashi butter, tatsoi and pickled daikon.
The Executive Pastry Chef Lorena Tommasi has most recently worked with Jeremy King and the main dessert is The Vivienne Heel - a sharing dessert served inside a chocolate stiletto. Expect that to be on a few Instagram feeds.
Next is Pepperbird, a speakeasy-style bar which they say will be "guest list only". We're not quite sure what that means but whatch this space.
And finally, there's Upstairs at Pillar Hall, a massive events space that will apparently fit in over 500 people.
It's been a pretty massive undertaking, so it'll be very interesting to see how all this turns out.
