New bar Brutes of Mayfair pairs Monster Munch topped martinis with crisps & caviar

When you learn that the duo behind new Mayfair bar Brutes have an absolute ton of restaurant and bar experience between them, it's perhaps no surprise that they've managed to feature every current bar and snacks trend in town. But a proper look at what they have planned for their Bruton Place bar shows that they are intending to take almost everything to the next level.

While everyone else is doing martinis, Brutes goes one further with a martini card that allows you to pick your base spirits, the style it's served (dry, wet, dirty and - a new one on us - brutal), plus the toppings. The latter includes some particularly fun options, including pickled onion Monster Munch and chicken scratchings. And their bar snacks offering looks like someone's spent a lot of time obsessing over picky bits TikTok with oversized crisps being served up with caviar and an on-point French dip.

Founders James Stevenson and Guy Mazuch met when they were working at JKS Restaurants, where James was Beverage Director. Guy has also worked on cocktail programmes for Kitchen Table, Lyles and Ambassadors Clubhouse. Here at Brutes they're hoping it will be "the kind of bar we've always romanticised". So the staff will boast 1960s-style white bartender jackets, there'll be a bar with 12 seats (and a small lounge area) and even a range of lifestyle merch.
