The Eagle Bar
If you've walked past Grosvenor Square any time over the past few years, you'll have seen the huge development taking over what used to be the US Embassy. It's going to become the Chancery Rosewood, sister hotel to the Rosewood over in Holborn.
Now, the building is finally getting close to the finishing line and we're finally starting a picture of what's opening inside the hotel. Not since the opening of The OWO has such a large endeavour been launched, but unlike that hotel, most of these restaurants are opening at the same time. Here's what to expect:
Carbone: This is the UK outpost of one of New York's most well-known restaurants, and one that is still frequented by A-listers over there. Carbone is a classic take on New York Italian food and the London outpost will be one of The Chancery's most prominent restaurants. Read more about Carbone.
Tobi Masa: Chef Masa Takayama has proved to be a big hit in the Harrods Dining Hall, but his time has come to an end there and he is instead opening his first full UK restaurant inside the hotel. We're told it will be a Mayfair interpretation of his three-Michelin-starred restaurant in New York (Opens 16 September 2025). Read more about Tobi Masa.
Serra: London loves a Mediterranean restaurant right now, and that's the space that Serra is filling at the hotel. The restaurant is led by Chef de Cuisine Alex Povall, last seen as Executive Chef at Berenjak in Soho, so it'll be interesting to see his take on Mediterranean and Greek cuisine (Opens 1 September 2025).
Jaqueline: You can't open a London hotel without thinking about afternoon tea, and it seems likely that Jaqueline will be filling that gap. This is billed as a tearoom and dessert salon and they say the pastries here are "inspired by single blooms and created using perfumery techniques" which sounds intriguing (Opens 1 September 2025).
Eagle Bar: This is the hotel's rooftop cocktail bar that also features the huge American eagle sculpture that the hotel inherited from its days as the US Embassy. There aren't many rooftop spaces in the heart of Mayfair, so this place should prove popular. There will be a listening bar aspect too, because are you really a proper new bar in London if you aren't a listening bar too? (Opens 1 September 2025)
GSQ: This is the hotel's deli, serving up Assembly coffee, pastries, salads and sandwiches. It'll have a terrace space on the square. (Opens 1 September 2025).
But what about Le Caprice, you might ask. Earlier on, the hotel was said to be the location for the return of Richard Caring's Le Caprice. However, we've heard behind the scenes that things were touch and go on that launch and the hotel's PR seems to be in neither-confirm-nor-deny territory. So we'll have to wait and see on that front.
And are there maybe more announcements to come? There's room on the plans of the hotel for a big rooftop restaurant and none of the restaurants so far have been earmarked for that. So let's wait and see...
