When most chefs earn their second Michelin star, they can then allow themselves to bask in the glory (and the extra bookings) for at least a few months. But not Angelo Sato and Humble Chicken.
The restaurant started out as a primarily yakitori affair back in 2021. Then, it pivoted to more of an omakase/tasting menu approach in 2023, unofficially termed Humble Chicken 2.0. This proved to be an extremely good decision, with the restaurant earning its first star in 2024 and then a second in 2025. But Sato is not done yet as less than a month after getting that second star, he closed the restaurant for what's supposed to be a month's refurbishment, but has since turned into three months' work.
The first obvious push for the third star is the number of seats - that's down from 20 to just 13. Those people will be sitting by a new custom-made cherry wood counter, all with a view to allow more interaction with the chefs. Apparently, there's also a new custom wine and sake wall. As for the food, there's a refreshed 16-course omakase offering that, as before, is influenced by Japanese and European cuisine and there promises to be a bigger focus on sake on the drinks side of things.
Price-wise, it's now £235 (it was £185 before), and there will be two sittings - at 6 and 9pm (and lunchtime on Saturday).
As Sato said in an Instagram post"...the work isn’t finished. My dream has always been three stars, and that’s exactly what we’re coming for." Will it get that coveted third star? We'll find out around March 2026...
