HIDE chef Yiannis Mexis to bring live-fire Greek restaurant PYRO to London Bridge

HIDE chef Yiannis Mexis to bring live-fire Greek restaurant PYRO to Borough market

17/4/25 - updated with the opening date

This PYRO comes from chef Yiannis Mexis, previously at Elystan Street, The Ledbury and Petrus and most recently head chef at HIDE. It sounds not entirely dissimilar to a nearby Borough Market restaurant in that it's billed as a Greek restaurant that's "a celebration of cooking over fire". PYRO is taking over the space that used to be In Horto.

Sourcing from a combination of British producers and Greek farmers,  you'll find a combination of small;l plates and sharing dishes here which include:

  • Spanakopita, fragrant herbs, barrel-aged feta
  • Mussel saganaki with toasted bread & vine leaf
  • Embered souvlaki skewer, prunes, radicchio, sour apple
  • Barbecued octopus in spiced red wine with yellow split pea
  • Portokalopita, citrus leaf ice cream, orange liquor

They'll also have a Greek Sunday Feast at the weekend.

The vibe they're going for is "the laid back buzzy joy of a Greek Taverna" and it will include a bar with a big garden and cocktails from Ana Reznik (previously A Bar with Shapes for a Name).

Given that OMA and AGORA have been just huge hits, we can see how there's plenty of room for PYRO too.
