Fifteen years might be a long time between new restaurant concepts, but the team behind Medlar in Chelsea are finally ready to impress London with their next endeavour. It’s called Cornus and is opening atop the Ice Factory in Belgravia, an area surprisingly bereft of rooftop spaces.
They brought in Gary Foulkes as Executive Head Chef to lead things at the new restaurant. He's had a career that's included starting under Gary Rhodes and working with Philip Howard at The Square. But he's probably best known more recently as the man in the kitchen at Angler, who took that restaurant to its first Michelin star. The menu here will be seasonal and "grounded in the traditional principles of French cuisine". That means dishes that include:
- Hand-rolled spaghetti with native lobster, Amalfi lemon, N25 caviar and Two Fields olive oil
- Roast Landes chicken with Scottish langoustines, sweetcorn and roast chicken sauce
- Lake District Farmers Lamb with Romero pepper piperade, lamb kofte, fried capers and olives
They also have an impressive pastry chef, Kelly Cullen, who comes from Cornerstone (and was also at Angler). Desserts on the menu include a mille-feuille of English raspberries with lemon verbena cream and baked raspberry ice cream. It's all sounding very good so far.
They're apparently also bringing back many former Medlar people to work on the new restaurant so it sounds like they'll have a strong team from day one. As for the look of the restaurant, the designers behind Trullo are in charge and they're aiming for a "mid-century modern aesthetic". There are also floor to ceiling windows as you can see in the photo below, so the view should look pretty impressive too.
