The ex-head chef of Kiln is opening two Thai restaurants, PAM and AREE

We love a busy roster and one chef who has a lot on her plate at the moment is Karla Knowles. The former head chef at Kiln is busy working on not one but two new restaurant openings over the coming months. To do that she's teamed up with Romain and Edouard Bourrillon who are behind the Maison Vivantes restaurant group and also own Cocotte and Casa Felicia.

They're starting with PAM in Farringdon. That's going to be Karla's first standalone restaurant. We don't know what's going to be on the menu there, but Karla's been running a series of collaborative supperclubs over the summer, a theme which is going to be replicated in the restaurant itself.

They're describing it as "a playful and creative Thai restaurant in the heart of Farringdon, where bold flavours, British seasonal produce, art and music come together to create a unique all-day destination." And, in common with the themes we've seen at both Impala and, more recently Kid, it's very much an offering that's London-focused. "While rooted in Thai flavours and traditions, the menu embraces creativity and seasonality," they say, "delivering an experience that is both authentic and distinctly London."

There's less information on AREE. All we know about that is that's going to be a fire-led Thai-inspired restaurant and it's taking over the old e&o spot in Notting Hill, with a projected opening date of some time next year.
