Three years after closing The Laughing Heart in Hackney, Charlie Mellor is back with his latest venture, an Italian trattoria with fellow sommelier Cameron Dewar, formerly of Luca and Burnt Ends.
Osteria Vibrato is the latest to join the recent trend of new Italian restaurants opening in town, this one with a menu created by Gaia Enria, founder of recently closed Burro e Salvia. Hoping to set themselves apart from the crowd, they're saying the menu will have a focus on simplicity.
Chef Louis Lingwood (ex-Quo Vadis and Toklas) is heading up the kitchen and serving a classically structured Italian menu - think, Bagna cauda crostino, White risotto with 48-month Parmigiano Reggiano and Veal cutlet alla Castellana with Fontina and prosciutto. For dessert there'll be homemade amaretti biscuits that will be made to order. Interestingly, they're also already highlighting that there will be a cover charge of £3, which is to cover olive oils, aged parmesan, some freshly baked bread for their scarpetta, scarti di cucina (kitchen scraps), and a "bespoke formulated mineral water".
As for the wines, which were a big deal at The Laughing Heart, there will be 250 on the list, with a focus on classically styled wines.
The restaurant takes over what was most recently Cinquecento Pizzeria.
