Wine bars really have made a huge comeback in the past few years and this next opening really highlights that trend. One of the Savoy's main cocktail bars is about to get a complete relaunch as The Beaufort Wine Bar.
The bar is set almost at the centre of the hotel's ground floor and has been subject to quite a few revamps over the years. The latest sees it getting a 250-bottle list, with about half of that available by the glass, as they'll be making good use of the Coravin system. Head Sommelier Romain Audrerie will be in charge. He opened Chiltern Firehouse and most recently headed up the wine at all of Chiltern owner André Balazs' places.
There will also be a new food menu and that's led by a bit of tableside action. They'll be wheeling around a custom flywheel slicer trolley and slicing charcuterie to-order. Alongside that will be other dishes like a black truffle cheese fondue and a caviar section (it is the Savoy, after all).
They're not completely getting rid of cocktails, though - the list will now feature "gastronomic wine cocktails" led by cognac, grappa and pisco.
