
We were fans of Fantomas when it first opened in Chelsea, late in 2024. It was part of a trio of restaurants that opened in a short period of time by the group behind Wild. Krododilos and Pinna were the stablemates and continue to do well, but things turned out to be short-lived for Fantomas, which closed in August. Chef Chris Denney left and there were promises of a complete relaunch.
Well, now we know just what that relaunch will be, and it's quite a departure from before. Chelsea Grill is billed as a neighbourhood restaurant, which they say is "built around three key elements - fire, smoke and top-quality ingredients." Heading up the restaurant is Anton Vasilyev, who was most recently Executive Chef of Basque restaurant Sugaar in Paris.
It does sound a lot more similar to Wild than in its previous guise, with a focus on grilling "exceptional cuts" sourced from the UK and Europe as well as day-boat fish and seafood. They're also planning on vegetables cooked in ash overnight and dry-aged fish. The restaurant will have a rotisserie for poussin, which will be brined overnight and then dried for a day before being cooked over the fire.
As for desserts, they particularly highlight their in-house cherry pie, so that will be worth watching for. As ever, the wine list should be impressive as it always is at their restaurants, while cocktails include a Green Apple Gimlet, made with fresh Granny Smith apples.
Much as we did like Fantomas, we have to admit this sounds a little more relevant to locals.
