As you'll know from our guide to London's best pop-ups and events, there are some excellent residencies all over London right now. But one in Dalston deserves particular highlighting, we thought.
Joyeta Ng has a very impressive list of restaurants in her CV, including two two-Michelin-starred restaurants, Den in Tokyo and Kitchen Table in London as well as The Chairman in Hong Kong and the Noma pop-up in Kyoto. Now, she's popping up at "mu" restaurant for the next couple of months with a menu inspired by her Cantonese roots, and we were immediately struck how fantastic the menu looks, including:
- Fried stuffed chicken wing - deep fried chicken wings stuffed with glutinous rice, shiitake mushroom, Chinese sausage, and dried shrimp
- Steamed scallop with vermicelli and garlic - hand-dived scallops steamed in their shells with garlic and preserved lemon, and vermicelli soaking up the juices
- Mapo aubergine - Charred smoky aubergine with diced mixed mushrooms simmered in doubanjang and fermented black beans
There's lots more, and it all sounds great. The chef is looking to open a permanent restaurant in London based on the menu in the residency, so consider this residency a preview that should be well worth booking.
