We've heard murmurings of something new coming from Fallow but while we wait to hear about that, they've a new offshoot that's almost next door to their St James restaurant.
Inside St James's Market, they've taken over what was The Beau Brummell, a relatively short-lived pub from Cubitt House. The pop up is called Fowl, and is promising to be a "chicken shop like no other" and in keeping with their ongoing no/low waste approach, it will have a "beak to feet" menu. That means that chicken is included in all the menu:
- Cornbread, chicken and herb butter
- Chicken liver parfait, black cherries, sourdough soldiers
- Triple crisp hot wings, sriracha mayo
- Chicken Caesar salad, pickled lemon and anchovy
- Triple crisp chicken fillet bun with cheese sauce
- Chicken fries
And just to emphasise that the entire menu is chicken-infused, it all finishes with chicken fat crème caramel. Those pasture-raised and soy-free chickens are sourced in conjunction via The Ethical Butcher and Rare Breed Meats and they say they're "kept for at least twice as long, in a stress-free, high-welfare environment"
On top of that, Fowl will be teaming up with top chefs for limited-appearance dishes. That'll start with Pierre Koffmann, who (together with chefs Will Murray and Jack Croft) has created the Chicken Leg Corn Dog with Aleppo Pepper and ‘La Grande Coque Pie’ for two featuring confit chicken hearts, livers and cockscombs. We think you'll be seeing that corndog on quite a few social media feeds in the coming months.
