It seems that a high-profile residency is becoming a key thing to do before you open your own restaurant these days. The residencies at 10 Heddon Street are the best examples and now chef Daisuke Hayashi is getting ready to preview his new Mayfair restaurant Roketsu with a residency at Brown's.
Hayashi came to London after training at the Kikunoi Ryotei restaurant in Kyoto and has been Executive Head chef at Tokimeitē in Mayfair. His new restaurant will be all about Japanese Kaiseki dining - and that's what he's bringing to Brown's. So expect a multi-course Japanese tasting menu, finishing off with an organic, stone milled, single-varietal matcha tea.
He'll be setting up in the more intimate setting of the hotel's drawing room - which will be transformed into a Japanese tea room for the event.
So if you want to get a preview of Roketsu - a trip to Brown's should be in order.
