Crisp Pizza open The Marlborough pub in Mayfair with a little help from The Devonshire - here's a first look

One of London's big openings for the autumn is the arrival of Crisp Pizza in Mayfair, where they've taken over The Marlborough Head pub on North Audley Street, renaming it The Marlborough. 

For the Mayfair opening, Crisp's and now The Marlborough's owner Carl McCluskey is getting support from the whole team behind The Devonshire: Charlie Carroll, Ashley Palmer-Watts and Oisín Rogers. That's not to say that Carl himself doesn't know plenty about pubs. His nan ran The Chancellors in Hammersmith, where Crisp Pizza is, before he took it over from her. 

If you've been living under a rock for the past few years and don't yet know about Crisp Pizza, they serve up New York-style thin and crispy pizza out of a tiny kitchen in a pub right by Hammersmith Bridge. Numerous food 'celebs' have made the pilgrimage to the pub, notably Barstool Pizza's Dave Portnoy. Even Michel Roux turned up to film a piece for Food Network. They are definitively one of the best pizza purveyors in London.

Here at the Marlborough, the pizzeria will be downstairs in what they're calling a "speakeasy environment". Upstairs, it will be more of a traditional pub, so it's similar to how The Devonshire have (mostly) kept the food and drink elements separate. Hot Dinners got a sneak preview of the menu and for anyone who made the trip to Hammersmith, they'll find the pizza offering here familiar. "We're starting off with a similar menu to Hammersmith," Carl told us, "so we can focus on quality and put new bits on when we're happy."

For that launch menu there will be eight traditional one-person pies. Options include: 

  • Cheese pie - San Marzano, mozzarella, fior di latte, Parmesan, Honest Toil EVOO
  • Nduja pie - San Marzanno, mozzarella, buffalo mozzarella, parmesan, Calabrian nduja and Honest Toil EVOO
  • Crisp W6 pie - San Marzano, buffalo mozzarella, lashings of Pecorino and Honest Toil EVOO

There'll also be a four-cheese calzone, two bar pies, including a New Haven-style one, and there will also be Grandmas pies, which are more of a sharing affair. 

The Marlborough will also have a short edit of desserts to start, with more to come. We very much fancy the nutella calzone, but there will also be a tiramisu, fior de latte soft serve with olive oil and affogato.

Most importantly, they're looking to replicate the method The Devonshire uses for pouring some of the best pints of Guinness in town. There will, of course, be lagers and ales if Guinness isn't your thing. Expect this to be a very big deal when it opens, with quite a few people milling outside drinking the black stuff.
