A month ago we reported the imminent opening of a new food hall at Borough, The Borough Market Kitchen. Now we've got more intel on one of the new traders that'll be setting up shop there.
Batera will be a pintxos bar from Jon and Nicole Warren, the team behind Borough's cookery school Mimo. Inspired by all the fabulous snacks you'll find in San Sebastian, where Mimo was founded, it'll serve up a daily changing menu made with both Basque specialties and British produce from the market.
Expect to find rows of gorgeous pintxos to choose from. They'll be serving up a range of different flavoured tortilla slices - choose from the likes of olive oil confit cod with piperade, leek and black olive confit; crab in smoked oil and lemon zest with spicy miso mayonnaise; and guindillas and pyke caviar.
Other bite size bites of joy include gilda skewers, Scottish prawns with cider vinaigrette; and marinated artichokes, mint, toasted almond and Idiazabal pesto.
It's not just food though. They'll be pouring Zapiain cider and Txakoli from a height and there'll also be beer from Basqueland Brewing. And, if all that makes you fancy making pintxos yourselves, Mimo run a San Sebastián: Pintxos of the Old Town cookery class that you can book.
