Summing it all up: Chefs from Royal China, Saske No Hana and Yauatcha join forces in this Japanese/Chinese restaurant opening at the Four Seasons Hotel London at Ten Trinity Square

 

The low-down

We've been wondering for a while what exactly the Asian restaurant would be that was following La Dame de Pic into London's newest Four Seasons Hotel. Now they've released the details.

Mei Ume will blend both Chinese and Japanese cuisines and it's got an impressive team of chefs involved in doing just that. Head Chef Tony Truong, used to be at Royal China - his sushi chef Mun Seok Choi, was at Sake no Hana, and Dim Sum Chef Liang Kian Cheng, comes via Yauatcha.

If you're wondering what exactly this modern take on both cuisines would involve, maybe some ideas of dishes would help: 

  • crispy baby squid with salted eggs
  • stirfried Dover sole with cloud ear mushroom and celery braised pork belly with crab.
  • braised pork belly with crab.

We imagine their Peking Duck will be quite the dish to order (and it'll probably come at a hefty price tag as well).

A popular stop will be the sushi station serving up spicy tuna with karashi and parmesan flakes. Or how about Wagyu beef sourced from Kagoshima served with either Japanese spicy BBQ or sake butter sauce?

As you'd expect, the cocktail menu has a similar fusion feel. So you'll find loads of sake, shochu and both Taiwanese and Japanese whisky. There'll also be a private dining room with room for up to 14 guests .
