Listening bars are all the rage right now, but what about listening bakeries? Well, Muswell Hill now has a genre-defining new bakery bringing together top-notch viennoiserie and hi-fi vinyl culture. Turntable Bakery opened last weekend, and both the counter full of bakes and curated soundtrack proved to be a big hit with locals who queued around the block ahead of opening in order to get a first taste of the food, music and vibes.
The story behind Turntable Bakery is a familiar one: Anca Ksifkov-Gavra was made redundant from her corporate job during the pandemic and started baking. What began as a hobby turned into a career change, with Anca going on to work at the every-popular Miel Bakery, and baking for friends, family and neighbours from her home kitchen (record player always on in the background) before planning - and now having opened - Turntable Bakery.
"Baking and music have always gone hand in hand for me. I always have something playing. First streaming, then I finally bought a record player. And then more and more records! I wanted the bakery to have a record shop vibe to it, whilst also feeling a bit like a living room with comfy sofas, low lighting and great decor. A place where customers can get great pastries and coffee, put a record on, hang out and have a great time", Anca explains.
"The bakery menu is curated like a record collection, in a way. There is the “A-side” with all the classics permanently on the menu - croissants, plain au chocolat, buns, sourdough etc - and a “B-side” with seasonal specials. Our signature bake is a laminated pastry swirled like a vinyl record which we call “the 45”. The flavours will change according to the season; currently it’s cardamom, almond, cherry jam and streusel. You can expect lots of savoury items too, like focaccia sandwiches and our current savoury special: an N’duja and mozzarella bun topped with hot honey and basil."
The Turntable Bakery team consists of just four members - two pastry chefs and two FOH - however, pastry chef consultant Ludovic Monsorez (current Head Viennoiserie at Qima Cafe, previously Kuro London and Miel Bakery) has joined for the launch period to develop the menu and smooth out production. Ludovic has a strong track record in this department, having recently consulted for Leyton-based Middle Eastern bakery Farha and Taiwanese cafe bakery Yikou in West Norwood. All of which suggests Turntable Bakery is definitely one to watch within London’s ever-competitive and expanding bakery scene.
What’s more, they’re working with great suppliers including Wildfarmed, The Estate Dairy, Cacklebean Eggs and North Shore Coffee Roasters - so you know everything is made with great ingredients.
