As Londoners in the know understand, if you want to try some of the really interesting new Asian food in town, you need to head over to London's emerging Chinatown in Bloomsbury. Which makes it the perfect spot for a new bakery to open its doors.
Rise & Fold comes from Chin Teow, the man behind dessert and matcha house brand Tsujiri. As he explained to Hot Dinners, "Rise & Fold isn’t about opening just another bakery. London already has plenty of excellent bakeries. What we felt was missing was a place that celebrates the exciting bakery culture emerging across Asia, while combining it with the craftsmanship of artisan bread and viennoiserie."
To that end, their breads and pastries take inspiration from a range of countries and culinary cultures, including Japan, Korea, Hong Kong, Malaysia, Singapore and beyond. The signature dish is their Japanese salt bread, but the range also includes must-tries like the matcha cashew praline cookie, black pepper beef pain suisse and yuzu wasabi prawn roll. And the bakery makes everything in-house, including their kimchi, chilli oils and sauces.
For drinks, they're serving Origin coffee and matcha imported from Kyoto.
"We’re a small independent bakery producing everything in limited batches each day," says Chin. So if you want to be sure of getting your salt bread fix, you'll have to get down here early in the day.
