They only just announced that the original Milk Beach is transforming into a wine bar. Now the same team is opening a new place in Soho. This time, they're joining the handroll craze that seems to be everywhere right now, although there are more than just handrolls on the menu here.
The new place is Saltwater, a new takeaway sushi place on Berwick Street. The key difference here is that the handrolls and sushi are made to grab and go. On the handroll menu you'll find salmon with avocado and yuzu mayo, bluefin tuna with shiso, yuzu kosho & smashed avocado and maple aubergine with broccolini & tamari roasted pumpkin seeds. Nigiri options will include seared salmon with miso glaze and shichimi and hamachi with ponzu and jalapeño.
On top of that, they'll also have donburi bowls, like Saltwater schnitty with teriyaki & kewpie served with rice and smacked cucumber.
They do have someone interesting behind the menu - Shaulan Steenson, who has experience at Endo at Rotunda and Asa Izakaya. Meanwhile, Executive Chef Tom Cajone (previously at the Columbo Group, which runs Blues Kitchen and The Parakeet) will be in charge of the kitchen here.
If you want to have your sushi in, there will be seating for 50 inside. As to whether London needs yet another handroll-focused restaurant? We'll have to wait and see.
