They only just announced that the original Milk Beach is transforming into a wine bar, and now the same team is opening a new place in Soho. This time, they're joining the handroll craze that seems to be everywhere right now.
The new place is Saltwater, a new sushi restaurant on Berqick Street and yes, the key element is all about Japanese handrolls being served over the counter. The handrolls on offer are going to include bluefin tuna with avocado and fermented chilli alongside "chicken schnitty" with avocado and spicy mayo. That's not all, though, as they will also be serving nigiri by hand, including seared Norwegian salmon with miso glaze or hamachi with jalapeño and ponzu.
On top of that, they'll also have donburi bowls, like fried aubergine with maple black vinegar glaze.
They do have someone interesting behind the menu - Shaulan Steenson, who has experience at Endo at Rotunda and Asa Izakaya, among others. Meanwhile, Executive Chef Tom Cajone (previously at the Columbo Group, which runs Blues Kitchen and The Parakeet) will be in charge of the kitchen here.
Can London take another handroll-focused restaurant (this is the third to open in Soho alone in the past couple of months)? We'll have to see.
