Alta will be a taste of Northern Spain in Carnaby when it opens at Kingly Court

It's been a while since we reported on chef Rob Roy Cameron. Back in 2017 and 2018, he worked on two projects with mixologist Tony Conigliaro, Untitled in Dalston and Gazelle in Mayfair. And the reason we're talking about him now is that he's back in London and about to open a very interesting new restaurant, this time in Carnaby.

ALTA takes as its culinary starting point open fire cooking and the food of Northern Spain. Cameron certainly has Spanish-related experience, having worked with Albert Adria for years at both El Bulli and heading up his 41 degrees restaurant in Barcelona. We're told the menu here will take inspiration from the Basque region and apply that to amazing British produce. So the Iberico comes from Ledbury chef Brett Graham's Shropshire farm, and Good Earth Growers in Cornwall are going to be providing specially grown Spanish peppers.

Those in turn will be used to create dishes like;

  • Homemade txistorra & onion cider jus
  • Romesco, razor clams in white escabeche
  • Chocolate mousse with smoked olive oil meringue

Even the drinks list is being given a five-star treatment under the watchful eye of Dino Koletsas, who was head of bars and beverages at Harrods. There'll be a wall of wines on tap, including fine wines, with a focus on low-intervention and ethical production methods. Ciders will also get a look in with options from Herefordshire, Scotland and Somerset.

It's going to be a pretty big space, stretching over two floors with a private dining room and a heated outdoor terrace.
