Warehouse in Covent Garden sees ex-Silo chef open The Conduit Club's first public restaurant

Sustainability is such an easy buzzword for London restaurants to bandy about, but when it's used by a chef who used to head up the kitchen at Silo, you can feel pretty confident he knows what he's talking about.

Brendan Eades' new digs are at The Conduit members club in Covent Garden who are about to open their first restaurant which will be open to the public. Warehouse will be on the ground floor of their grade II listed building.

Eades' menu there will focus on bold flavours and seasonality, working with day-boat fish suppliers and organic dairy farmers to make the restaurant as sustainable as possible.

Drinks sound just as interesting. In charge of the drinks list is mixologist Walter Pintus - who comes here via The Ritz, Connaught and The Mandrake. It's his job to come up with hyper-seasonal cocktails using fresh seasonal fruit or his own syrups, vinegars and pickles.
