Polpetto's Head Chef Florence Knight signs book deal

florence knight polpetto chefCongrats to Polpetto's Head Chef Florence Knight who's just signed her first book deal. The book in question, ONE, is the first in a two-book deal and will be released by Saltyard in May next year. It'll focus on one key ingredient at a time, such as olive oil, salt, or chocolate, basing recipes around each one.

“I’ve always believed wholeheartedly in simple, surprising dishes that show off the finest ingredients to their best advantage," said Florence on the news. "I’m really excited to bring my cooking into readers’ kitchens.”

“Florence is simply one of the most inspiring chefs," said publisher Elizabeth Hallett of Saltyard, "we are hugely excited to be working with her on her first book. It will be beautifully simple, distinctive and stylish – just like having Florence in your own kitchen.”

Having bumped into Florence when she was at the recent party to celebrate Zagat's 30 Under 30 list of influential young London restaurant folk (of which she was one), Hot Dinners can attest to the fact that having Florence in your kitchen can only be a very good thing.

Polpetto is currently closed whilst waiting to move into new premises in Soho. We haven't heard where yet, but we do know it's going to include its own bar. Huzzah!
