What was once The Westbury has been undergoing a big redevelopment (they've even added an extra floor) since 2022, which will turn it into the St Regis London, a UK version of the luxury hotel group. We've been waiting to see what they would reveal as their restaurant and it turns out to be an interesting choice with a big name behind it, but maybe not one familiar to Londoners.
The new restaurant will be Le Perroquet, and it's being headed up by American chef Daniel Rose. For many years, he mainly ran restaurants in France (he still runs two in Paris), but his main restaurant and his home base is now the Michelin-starred Le Coucou in New York.
In London, he's sticking with his signature French cuisine and the restaurant will be an all-day brasserie with a menu that they say will be "refining the classics whilst retaining their heritage". The restaurant here will be headed up by Executive Head Chef Robert Aikens (aka Tom Aikens' twin brother), most recently seen in London helping out on the menus at the sadly departed Marceline.
As for the menus at Le Perroquet, they're still to be unveiled, but we'll have more details closer to the Autumn opening. Frankly, we're looking forward to seeing what they've done with the place after four years of work.
