A year after his longish residency in Islington won him legions of London fans, top ramen chef Ivan Orkin is back in town with another residency. This time he's heading into the City with a two-month stay at The Ned. The chef, who runs the highly-rated Ivan Ramen in NYC and has been the subject of a Netflix Chef's Table episode, will be presenting a special menu at The Ned's Kaia restaurant.
There will be four new ramens on the menu:
- Tori Shoyu Wonton Men: Clear heirloom chicken broth, seasoned soy tare, chicken breast “chashu,” chicken wontons, yu choy, and thin rye noodles.
- Lobster Mazemen: Rich lobster broth, lobster poached in ginger-scallion butter, fried shallots, katsuobushi salt, and thick rye noodles (optional caviar add-on available).
- Iberico Pork Collar Tsukemen: Suckling pig pork broth, binchotan-grilled mushrooms, pickled spring greens, grilled Iberico pork collar, soft egg, and thick rye noodles.
- Vegan Truffled Shoyu Ramen: Truffled vegetable and mushroom broth, grilled maitake mushroom, roasted tomato, yu choy, and scallions.
Having loved his last pop-up (you can read our review of that here) we can't wait to try Ivan's new dishes. Even better, the chef is still talking about opening permanently this side of the Atlantic. "With the impending opening of Ivan Ramen in the UK," Ivan explains, "my love affair with London only deepens. The extended pop-up with The Ned allows me to start cooking in London before our restaurants open and present fun riffs on our menu, especially those tailored to the guests at Kaia."
