One of London's best restaurants is going into business with US burger folk Shake Shack for a one-day-only special. Two Michelin-starred restaurant Ikoyi (also No 35 on the World's 50 Best Restaurants List) normally costs £300 per person if you want to eat there. But for a single day, anyone can pop into Shake Shack and order the burger they've collaborated on.
The Ikoyi burger will be a cheeseburger topped with deep-fried buffalo sweetbreads, fermented scotch bonnet relish, Efo spice emulsion and grilled mustard greens. It'll come in a toasted potato bun brushed with pumpkin seed miso butter. But that's not all, they've also come up with their own version of the Shack fries too. The Dark Beer Fondue Fries will be crinkle-cut fries seasoned with Ikoyi’s peppercorn blend and topped with dark beer fondue infused with lemon thyme, garlic, penja peppercorn, and sliced negi onions.
Apparently, the collaboration's been years in the making and is the result of a longstanding love-in between Jeremy Chan of Ikoyi and Mark Rosati, Shake Shack's Culinary Director. As Chan explains: "Having discussed it with Mark many times, it’s an honour to finally have it come to fruition. The Ikoyi Burger is an homage to one of the iconic Ikoyi dishes – caramelised veal sweetbreads glazed in buffalo sauce."
The burger and fries will be on sale on 13 October at the Shake Shack in Covent Garden with the burger costing £10.75 and the fries £6.55. Net proceeds from the collaboration will be going to the London food charity, City Harvest.
