Pierre Koffmann talks about his new restaurant at The Berkeley

It’s one of the most-anticipated openings this Summer and now Pierre Koffmann has been revealing details of his restaurant, Koffmann’s at the Berkeley Hotel in Knightsbridge to trade title Caterer Search.

The 120 seat restaurant, which will open on 28 June, will see Koffmann overseeing the kitchen with Tom Payne as Head Chef. Payne used to work with Koffmann back in the day when he was at La Tante Claire – he also spent seven years as executive chef at Marco Pierre White’s restaurants.

Dishes you can expect to enjoy at Koffmann’s will include those inspired by Koffmann’s home region of Gascony. There’ll also be some elaborate carving of whole joints and beef wellingtons at the table.

'This is nothing to do with La Tante Claire or Michelin style food,' Koffmann tells Caterer Search. ‘We're using cheaper ingredients and it's much more relaxed. The food will be simple but the taste will still be there. I only know one way to cook.'
