Stubby's is an Aussie-influenced cafe and bar coming to Parsons Green

Put down your stubby holder and throw on your fanciest stubbies… if you’ve ever been to Australia or known an Australian, then you may be aware that ‘stubbies’ can mean a couple of things. We’re about to give you one more definition: there’s an exciting new venue called ‘Stubby’s’ coming to Parsons Green.

The team behind the launch have good form: Oli Man and Greg Weaver, who hail from southwest London, opened These Days Bar & Kitchen in Bermondsey in 2023. Stubby’s is inspired by their time working in Oz and promises to bring the Antipodean country’s ultra-relaxed yet high-quality hospitality to London on the former Freak Scene site.

To accompany ‘the Sydney vibe’, you can expect sandwiches, salads and snacks (pickles, sausage rolls), as well as a well-curated deli (bakery items, pickles, homemade sauces). There’s even a bit of homewares creeping in, with the likes of candles, glassware, table linen and cookbooks available to purchase.

Sandwiches (made daily) are a step above the usual and include:

Barry: Shiso porchetta, kare sauce, smacked cucumber on ciabatta
Tamsin: Koji chicken thigh, chilli crisp, salsa verde, iceberg lettuce, Parmesan on focaccia
Georgia: Mutton adobo, potato scraggle, pickled kohlrabi on ciabatta
Candice: Tempura aubergine, black caramel, sugarsnaps, sage, goat’s cheese on focaccia

On the drinks side, there will, naturally, be some seriously good caffeinated beverages (hello, flat whites, cortados and cold brews). They’ll also be previewing what’s trending in the drinks scene Down Under, which could be anything from a Blueberry & Matcha Cloud Latte to a Cold Brew and Maple Sea Salt Cloud Latte.

There’s also a full cocktail menu, plus hand-selected wine from Australia’s Hunter Valley and New Zealand’s Marlborough region. Aussie craft-beer fans will also be happy to learn that Byron Bay’s Stone & Wood will be on tap as well as Pilsner. If that’s not for you, never fear… you can also grab a stubby of Victoria Bitter, Carlton Draught or Pacifico to further enhance your Australian education.
