Brook Green pub The Bird in Hand is given new life by the Holland's Max de Nahlik

Back in 2022, chef Max de Nahlikl regenerated West Kensington pub The Holland. Now, just half an hour's walk away, he's done the same with Brook Green pub The Bird in Hand. 

While The Holland is "British ingredient-led", Max has taken a different approach with his latest opening, instead going for an Italian/Mediterranean mix of dishes and pizzas. On the smaller plate side, you'll find smoked cod's roe with toasted focaccia and beef carpaccio with crispy kale, walnuts & lemon vinaigrette. On the larger side, there's a whole fish of the day and a pork chop for two. And while he's taking a different approach to the menu, he's still focusing on using local British ingredients. 

As for the pizzas, they include ventracina salami & fresh chillies and another with spicy 'nduja & smoked scamorza. Every month, he'll also be teaming up with another chef for a special, so watch out for those. There will also, of course, be Sunday lunch with roast porchetta on the menu. 

For the look, he's brought in the same designer as The Holland and there is a clear drinking space in here too, so it remains a proper pub. If you're local, this is certainly worth checking out, and if you're a fan of the Holland, you might want to stroll over here too.
