The Conduit is bringing Kent chef Will Devlin's farm-to-table restaurant Birchwood to Covent Garden

Chef Will Devlin runs a series of restaurants across Kent, under his Acre group, that have a big focus on sustainability and farm-to-table cooking. Of those, The Small Holding and Birchwood are the most well-known and now the chef is bringing the latter to London, opening Birchwood - The Conduit.

As that name suggests, this is going to be part of The Conduit club, but it will be a part that's open to the public, not just members. It's kicking off with a cafe and wine bar in summer, and they'll be following up with a rooftop restaurant in the Autumn. Part of us wonders whether that should be the other way around, but that's their plan. 

The cafe and wine bar will be an all-day restaurant, and they'll be using lots of produce direct from Acre's own farm. So the day will start with breakfast dishes like block butchery sausage and egg muffin and sandwiches like beef topside pastrami ruben on rye bread. Moving into the evening, it'll shift to a small plates menu. On that, they'll be serving their own in-house charcuterie, snacks that include mushroom croquettes & black garlic and desserts like a kuroda carrot cake and meadowsweet cream cheese.

The Conduit have made a few attempts at getting their restaurant space to work over the years, but this latest version sounds like the most promising yet. So it'll be interesting to see how Devlin's Kent menu translates to Covent Garden,
