You might have clocked The Pilgrm Hotel as an ideal spot to kill some time during a train delay/strike at Paddington Station; or even a place to stay the night. Here’s another good reason: their next chef-in-residency series will feature Keshia Sakarah, author and founder of Caribe, a Caribbean dining concept that’ll take over the hotel’s first-floor kitchen for seven weeks. It follows hot on the heels of the three-month residency from chef Mary San Pablo, who had a Filipino pop-up called LUTO.
The Pilgrm is keen to celebrate diverse food cultures and emerging talent as part of their incubator kitchen programme. Keshia, who hails from Montserrat and Barbuda, two small islands off the coast of Antigua, has run her Caribe pop-up concept since 2018. Her debut cookbook Caribe: A Caribbean Cookbook with History, was published in March this year. She also had a short-lived restaurant called Caribe at Pop Brixton in 2020, favourably reviewed by Jimi Famurewa in The Standard.
On the dinner menu for her autumn residency, you can expect Keshia’s bold Caribbean-inspired dishes, reflecting the region’s diverse African, Asian and indigenous influences:
- Saltfish accra with tamarind chutney
- Oxtail braised with soy, pimento and butter beans
- Curry goat slow-cooked with coconut and amchar masala
- Fried snapper with fermented pepper sauce and lime
In keeping with the Caribbean vibe, Kromanti Rum (an independent Grenadian brand) is partnering with the event to create a bespoke cocktail list. Alongside the tamarind-infused Hibiscus Rum Old Fashioned, we like the sound of the Scotch Bonnet Daiquiri with plantain-infused rum, scotch bonnet syrup, lime and hibiscus.
You’ll also find no finer wine list than the one curated by The Pilgrm’s wine-writer-in-residence, the acclaimed Fiona Beckett (The Guardian’s former food and drinks columnist). If you overdo it, remember the hotel has 73 guest rooms.
