If there's anything positive that could be said to have come from Covid and lockdown it's the number of small businesses that took the challenge presented by those dark months and turned it into something good. Maya's Bakehouse is one such endeavour. Baker Maya Manwaring had trained up at the prestigious Ballymaloe Cookery School and started baking sourdough and buns during the pandemic.
"I was home all day with a small baby, no creative outlet and nothing to do," she says. "So in between my son’s naps, I learnt how to make sourdough and eventually a friend pushed me to start selling locally and it’s all grown from there." Word of mouth spread and grew the business to the point where her Brixton business was now too big for her home.
Following a successful crowdfunder, Maya is opening her first bakery in Tulse Hill, today. As she explains: "I’ll be baking delicious sourdough bread made with carefully-sourced flours and monthly seasonal speciality breads. There will be all sorts of sweet bakes - all my classics like cookies, basque cheesecake and brownies but also all my new creations like nectarine custard crumble cake and chocolate custard babkas."
Later on, there are plans to add sandwiches to the mix too.
