In a nutshell: Sally Abe's new restaurant

Summing it all up: After gaining plaudits for her time at The Harwood Arms, Sally Abé arrived in the Conrad St James with her main restaurant - The Pem. It's aiming for an elevated, but fun British dining experience. 

The low-down

Sally Abé, who previously ruled the kitchen at The Harwood Arms, has announced her main new restaurant - The Pem - at The Conrad St James hotel. She's in charge of all the food at the hotel (including the recently opened Blue Boar pub) and this will be her main signature restaurant there.

The restaurant will be aiming to "build on the foundations of British cuisine" with a menu that intends to be elevated but fun. 

It'll have a seasonal menu, with dishes including:

  • Poached Native lobster, shellfish cream, heritage tomatoes and sweet olive
  • Roasted John Dory, with brassicas, lemon, sauce Choron
  • Black Forest Gateau, chocolate curls, English cherry ripple ice cream

As for the name, that's inspired by suffragette Emily Wilding Davison. It was her family's pet name for her. Why name a restaurant after a suffragette? Well that's down to the main female-led team at Pem. That includes head chef Laetizia Keating, who came from The Harwood Arms too and Emma Underwood as the GM, who was previously GM at Darby's.

That's not all that's coming though - as In addition to The Pem, the hotel are also opening The Hedgerow cocktail bar. So things really are changing at The Conrad.
