Summing it all up: Moto will be focusing strongly around sake and other Japanese spirits, aiming to bring lesser-known varieties to London - all paired with bar snacks too.
The low-down
Covent Garden is the home for new Japanese-inspired bar Moto. It'll be strongly focused around independent craft sakes and Japanese spirits sourced direct from breweries (and the name "Moto" comes from the fermentation starter used in sake).
On offer will be bottles of rare sake, shochu, and more Japanese craft spirits - as well as sake tasting flights if you're looking for a broader view, with trained staff on hand to help out too. There will also be snacks available alongside the spirits, specifically paired with the sake, including:
- Otsumami platters - including crisps, cheese, and charcuterie
- Nasu No Nibitashi - Simmered aubergine, perfect with a bowl of rice
- Hiyayakko - Chilled tofu
- Chicken Fry - their own version of chicken karaage, breaded with tempura crumbs and sake
- Grilled Miso Salmon
It'll be a relatively small space (taking over the space once held by Sibarita), seating 25 (with a few more at the bar) and you'll be able to buy sake to take home too.
It comes from the team of Brandon Chin and Erika Haigh and both are strongly focusing on sake - Erika has a WSET in sake as well as becoming a certified International Sake Sommelier while Brandon's aim is to "bring quality small batch sakes to the UK while telling the stories of the brewers"
