Summing it all up: The people behind Three Sheets are getting into the wine bar business with Top Cuvée in Highbury. Expect food from an ex-Naughty Piglets chef, a decent wine list to drink in or take away - and a few of their great cocktails too. 

The low-down

This one is particularly close to the heart. We were already huge fans of Three Sheets (it's easily one of our favourite bars in town) so to learn that they're opening a new wine bar and bistro within easy walking distance of where we happen to live is a glorious thing indeed. It's just off Blackstock Road, taking over the space from Exodus restaurant (opposite the Arsenal Tavern). 

"We want to be a neighbourhood place," Brodie told Hot Dinners. "My experience in Melbourne is that there were loads of bars in the suburbs that were really amazing. They could have been in the city centre, but they weren't precious about it. This site was a real diamond - we knew the minute we saw it."

Top Cuvee is a collaboration between Brodie Meah (part of the launch team of Dinner by Heston in Melbourne) and Max and Noel Venning (who also have Bar Three and Little Mercies). And on top of them, it'll have Head Chef Dan Miller in the kitchen, who comes from Naughty Piglets and the Harwood Arms. So it sounds like we'll be in good hands here.

It's apparently inspired by the small wine bars of Paris and we can expect "sharing plates prepared using classic techniques, alongside a range of charcuteries and cheeses." ""We want to make it accessible to everybody" explains Dan. "Dishes will be presented simply and taste good - that's it. It's just somewhere you can come that's unfussy and that's it."

And, of course, the wine list will be a big thing, "constantly evolving with wines by the glass rotating daily; with a focus on small producers showcasing natural wines without pretence." They'll also be selling these wines to take away and there will be craft beer and a cracking short list of cocktails by Max and Noel, which is a very good thing given their previous work, of course.

Inside, it'll seat 52 - a mix of counter seating, tables and a big communal area for walk-ins. With this and the Mountgrove Bothy around the corner (not to mention Farang a short walk away), it's all good news for Highbury folk.
