Bukowski grill brings Iberico burgers and pulled pork sandwiches to ShoreditchLaunching in the new BoxPark in Shoreditch, which sees several restaurant operators plying their trade out of converted shipping containers, Bukowski will be offering a simple, no-fuss menu with plenty to titillate. The Iberico Burger of the Month should get a few mouths drooling, topped with Iberico lardo and Morcilla.

Grilled over charcoal in the fires of the Josper oven, burgers are the main draw, alongside a Pulled Pork sandwich singing with Mexican flavours, Gloucester Old Spot marinated in orange juice, achiote and ancho chilli. There will also be a Hanger Steak and chipotle sauce sandwich, marinated in beer for eight hours and served on toasted sourdough.

The venture is a joint one between chef Robin Freeman, entrepeneur Alberto Figueroa, and Giuseppe Mascoli of Franco Manca fame and Black's members club.

"We wanted to create a great burger joint/diner, with all ingredients carefully sourced from small suppliers", Head Chef Robin Freeman told Hot Dinners. "Artisan bread, home-made condiments, triple cooked chips in beef fat and good meat - all that good stuff that we thought should be in a good diner."

The BoxPark will be the world's only container pop-up mall, with other operators confirmed as PieMinster, Fox and Ginger, Banger Brothers, and Vietnamese restaurant Namo.

Alongside the classics of cheeseburger, cheese and bacon, and a Bourbon BBQ chicken, will be the Chicano Pulled Pork sandwich.

"It's a great dish that was introduced to me by Alberto. It has some really unusual and distinct flavours, due to the Seville oranges and Achiote paste", Robin told us. Freeman has a colourful history, currently Head Chef at Black's members club he's also done a stint at Moro, and spent a few years as a tour chef for bands like Deep Purple, Aerosmith, Iggy Pop, PJ Harvey, The Eagles, and...Bananarama.

Drinks at Bukowksi will include Hop Daemon beers from Kent, homemade lemonade, Dunkerton organic cider, and "bottomless" filter coffee. Condiments are homemade, tomato ketchup, mayonnaise, horseradish mustard, and a fiery Scotch Bonnet relish.

Robin has been on his own burger trawl round London recently. "Hawksmoor's burgers are very good, Honest Burgers in Brixton are pretty on the money too. I haven't been to Meat Liquor but I'm going tonight, and I know the burgers from the Meatwagon so I'm ready to be impressed."

The appetite for burger continues unabated in London. This can only be a good thing.

Bukowski opens on 29th November 2011, opening Monday-Sunday 11am-8pm, late Thursdays until 10pm
