
Tom Geoffrey's Barang has been serving up its Cambodian-inspired menu across town in pop-ups, and now it's about to get a much longer residency. Taking over the spot recently vacated by Khao Bird (which has just opened in Soho), Barang will be the new long-term residency above The Globe Tavern in Borough Market.
Previously at Kiln, Tom has been developing a contemporary take on Cambodian cuisine over the past eight years, with dishes cooked over fire and designed for sharing, and he'll be using that same approach in this new residency.
The dishes on offer (which do sound great) include:
- Diver scallop with tamarind brown butter & pig’s ear crackling
- Laab of venison with pork fat & Khmer spices
- Fried quail, kohlrabi, Khmer hot honey
- Whole grilled Mackerel in banana leaf with Kep dipping sauce & green herbs
- Ex-Dairy Bone-in sirloin steak, bone marrow & prahok dripping, chilli relish.
And to finish off, there's a pineapple and galangal sorbet with candied nuts and lime leaf meringue. In charge of the cocktails will be Rachel Reid, most recently GM at Bar Swift, with drinks including a Kampot gin martini.
We've heard nothing but good things about Barang's previous pop-ups, so this is definitely one to check out.
