A new wagyu-led restaurant that originates in Fukuoka, Japan, is getting ready to bring late-night wagyu steaks to Fitzrovia.
Wagyu Yakiniku USHIO is taking over the site that used to be Palms of Goa, which itself closed last year, after over 30 years on Charlotte Street. It's based on Fukuoka restaurant USHIO Haruyoshi Bettei, and the head chef from the original restaurant is coming over to launch the London outpost.
Open only for dinner, everything here is led by lean cuts of Japanese Akami Wagyu, which is a little less marbled than you might expect wagyu to be. All the wagyu on offer here is shipped from Japan and cooked around the counter, omakase-style. There will be three main menus available with a seven-course omakase option (£95), a six-course selection focused mainly on the wagyu cuts (£55) or an à la carte affair.
On those menus, as well as the various cuts of wagyu steaks cooked in front of you, they're also showcasing the wagyu in a number of other dishes, including slow-cooked wagyu curry, seared tartare, noodles, lean carpaccio and even minced wagyu mixed with creamy Soboro cheese. And their key dessert is a matcha choux bun. No wagyu in that, we're afraid.
From the designs we've seen, the place should also look very impressive, similar in style to some of London's top omakase restaurants, spread across two floors, both of which are centred around a counter (and the basement can become a private room). They're also planning to be a late-night spot, opening past midnight on weekends, so if you do get a late-night craving for food, this will be very different to many other late-night spots in town.
