A short walk from Liverpool Street station, a brand new live-fire restaurant is coming to the City and it's from someone best known for his pubs.
Rob Star, the man behind the Electric Star Pubs (The Star of Kings, Star of Bethnal Green and many more), is opening Firestarter right next door to his City pub, The Star by Liverpool Street. He's teamed up with chef consultant Ricky Evans (The Ingredientist Kitchen & Secret Slider Club) to create the menu while the kitchen is headed up by Head Chef Leon Seraphim (previously Brigade & Beyond Food Foundation).
On the menu here, you'll find dishes like a crab doughnut with cowboy butter & smoked sriracha sugar alongside espresso-tamarind pork ribs as well as a Yorkshire wagyu beef tartare with tomato ponzu cured egg yolk and togarashi kewpie. Then, on the fire, they'll be grilling up big sharing dishes like a 1kg Galician rib or a 450g Iberico pork chop or, on the vegetarian side, a fire-roasted whole cauliflower with black garlic and red miso glaze. Burger fans won't miss out as there's a signature burger too, a double smash burger cooked "animal style" with smoked mustard butter and whisky caramelised onions.
Desserts will carry on the fire-grilled theme with a wagyu bone marrow Crème Brûlée on the menu, which we just have to try. And drinks will have an element of smoke involved with cocktails including the Smoke & Mirrors (mezcal & bourbon with pineapple & flamed orange).
The restaurant is opening in the space next to the existing pub (it's even sharing the same entrance), with the room all focused on the open kitchen (with some counter seating around that). "We know we're playing with fire," says Rob (we see what he did there) "opening a new restaurant in London right now, but that's what hospitality is all about, taking risks to create something people genuinely want to experience." City folk take note - this one sounds fun.
